    A keto inspired pancake recipe

    For the longest time I have been searching for a pancake recipe that ticked a couple of boxes; low carb, dairy free and tasty! I must admit I haven’t actually tried many alternative pancake recipes as I could never quite find one that I liked the sound of and I really wasn’t up for eating a batch of bad pancakes. Instead, what I decided to do was create my own pancake recipe that had all the elements I was looking for and hoped for the best! Being creative in the kitchen I wouldn’t say is something that comes naturally to me, that is more Ray’s personality, but that aside I knew it was something I fancied trying.

    Experimenting with coconut flour

    Coconut flour isn’t the easiest of flours to work with, and I am almost surprised that this worked out as well as it did. The general rule for coconut flour recipes is that a like for like with ordinarily flour recipes will just not work. However, this seemed to work ok. Yes the recipe has that coconut crunch between your teeth and flavour wise these pancakes by themselves are very ordinary, but with the right toppings and additions you have yourself an amazing, grain free and low carb alternative to everyone’s favourite breakfast.

    Keto inspired Coconut Pancakes

    Ingredients

    • 1 ½ cups of coconut flour
    • 2 cups of coconut milk (or any non dairy milk)
    • 2 eggs
    • 1 tsp of Vanilla Essence

    Ingredients

    • 1 ½ cups of coconut flour
    • 2 cups of coconut milk (or any non dairy milk)
    • 2 eggs
    • 1 tsp of Vanilla Essence

    Instructions

    1. Add 1 ½ cups of coconut flour into a large bowl.
    2. Add in first egg and whisk.
    3. Add in second egg and whisk until mixture is blended.
    4. Slowly add in milk and whisk until mixture is all blended together.

    We own a pancake maker hot plate which makes making small pancakes really simple, but you can also do these in a frying pan too. I added a little bit of coconut oil and cooked until browned. These can burn really easily to be sure to keep your eye on them! They are also much more delicate than a regular pancake so take care when turning them and/or flipping them! These pancakes really are a tasty, grain free, Dairy free and a keto a-ok option! Healthy, nourishing and ready and waiting for all of your favourite toppings.
