  • Gluten Free Apple Cake Recipe

    Here I am, right out the starting blocks for September with a seasonal gluten free apple cake recipe you will love. If you’re new around here then be sure to check out my seasonal apple & pear cake recipe – you won’t be disappointed.

    Autumn is my favourite time of year, and while after the summer we’ve had in the UK this year I am tightly clinging onto all and any of the last days of summer, I am secretly getting myself ready for embracing my favourite seasonal of all.

    But truth be told, these cakes (the one I shared above and this one) are perfect all year round, but if you’re into seasonal eating as much as I am then you will be as thrilled as I am to use your recently foraged apples to create a delicious treat this autumn.

    When we started making our favourite apple cake I was well aware that my mum was missing out. She has a gluten sensitivity and isn’t able to consume any gluten at all. So the search was on for a gluten free cake that we could make our own. I’m less confident in making the switch between gluten free and regular flour, and how it all binds together, so was definitely after a little guidance and of course the internet delivered. We’ve been making this cake for a couple of years now and have played around with elements of it so it is just to our liking.

    Gluten free bakes can tend to be a little dryer than their gluten heavy counterparts but this cake it divine. If I didn’t know it was gluten free I would really have no idea, it’s that good.

    The apple cake recipe

    Autumn’s crisp air and the smell of fallen leaves often evoke a longing for warm, homey desserts. What could be more fitting than a soft, aromatic apple cake that’s also gluten-free? Rich with the flavor of fresh apples and warm spices, this cake provides both comfort and a delectable taste. Here’s how to whip up this seasonal favourite:

    Gluten Free Seasonal Apple Cake

    Ingredients

    • 3 large baking apples such as Gala, and Granny Smith, cored, and cut into chunks.
    • 1 ยฝ teaspoons of ground cinnamon
    • 1 teaspoon of ground nutmeg
    • 1 tablespoon of fresh lemon juice
    • 160g plain gluten-free flour (I recommend Doves Farm Freee brand)
    • ยฝ teaspoon of xanthan gum (essential for gluten-free baking to mimic the binding property of gluten)
    • 1 teaspoon of gluten free baking powder
    • ยฝ teaspoon of himalayan pink salt
    • 140g of room-temperature grass fed butter
    • 200g of granulated sugar
    • 2 room-temperature eggs, whisked
    • 1 teaspoon of pure vanilla bean paste

    Instructions

    1. Setup: Begin by warming up your oven to 200°C. Thoroughly grease a square cake or loaf tin and place it to the side.
    2. Apple Mixture: Take a spacious bowl and combine the diced apples with ground cinnamon, nutmeg, and the splash of lemon juice. After tossing, let it sit.
    3. Dry Mix: In another bowl, incorporate the gluten-free flour, xanthan gum, baking powder, and salt. Whisk it together and keep it nearby.
    4. Creaming: Using a large bowl (hand mixer-friendly) or your stand mixer with the paddle attachment, beat the butter until it achieves a light, airy consistency (around 2 minutes). Gradually blend in the sugar, followed by the eggs and a touch of vanilla, ensuring a smooth mix after each addition.
    5. Mixing Dry and Wet: Time to introduce the dry ingredients to the creamy mixture. Mix until it's harmoniously combined, with a thick yet fluffy texture.
    6. Apple Fusion: With around two-thirds of your cake batter, merge it with the apple mixture, ensuring the apples are generously coated, resulting in a chunky consistency.
    7. Layering: Transfer the reserved one-third of the cake batter to your prepped pan, spreading it out evenly. Over this base, lay the apple-infused batter, leveling it out for uniform baking.
    8. Initial Baking: To trap the moisture and ensure even cooking, cover the pan securely with aluminum foil. Bake in the oven's heart for about 20 minutes.
    9. Final Baking: Post the initial baking, remove the foil and place the cake back in for an additional 40 minutes. A toothpick should emerge with only a few moist crumbs when it's ready.
    10. Cooling and Serving: Let the cake take a breather in the pan for about 15-20 minutes. With the edges slightly detached from the pan, utilise a thin spatula for a clean edge. Transfer to a wire rack, giving it another quarter-hour to cool. Slice while it's warm for the best experience.

  • Easy Seasonal Spiced Apple & Pear cake recipe

    We live a very seasonal rhythm when it comes to our lives and everything within it; from our home education to the foods that nourish us, the literature we consume, and what we celebrate. After a wonderful spring and summer, one where we welcomed our baby boy into our family, autumn felt like the perfect moment to settle back into our normal rhythms.

    Autumn brings with it many wonderful adventures, including apple and pumpkin picking. My grandad always has a wonderful apple crop and this year was no different. H (our toddler), had so much fun with her great-grandad picking his apple crop, some of which we were able to bring home for ourselves. We decided to make something fun with our apples, and instead of cooked or stewed apple, we decided that a warm apple cake was perfect.

    From humble beginnings

    A friend had pointed us in the direction of a perfect, seasonal apple cake, the Vegan Apple cake from BBC Good Food. It was a wonderful way to use up the apples we had picked and started us on bit of a journey into creating the perfect cake for our little family.

    We aren’t a vegan family, so although a few times we made the vegan recipe, we were able to switch the ingredients around with ease, preferring organic grass-fed butter to highly processed spreads. We’re extremely conscious of the health benefits around food and keen proponents of nutrition and bioavalibility of our nutrients and the best places to get them from, including animal products which are, for all intents and purposes demonized with sensationalist headlines and a heavy agenda (but that’s a discussion for another day maybe…). What we’ve found is that actually, the ingredients in this recipe are very interchangeable, making this a really versatile base recipe. From there we’ve done so much with it:

    • Switched our processed spreads for organic grass fed butter.
    • Switch plant based milk for the dairy alternative.
    • Used vanilla flavouring instead of almond.
    • Used a mix of apples and pears.
    • Added additional flavourings of mixed spice and cinnamon.

    Apples & Pears into a cake

    The recipe itself is easy and very simple to make with ingredients most of us have in our cupboards. What I love too is that there is nothing in it like eggs (so great for allergy sufferers), so less worry about ending up with raw mixture after cooking. It is also great for little helping hands that like to lick the spoon. It’s so easy to make, regardless of your dietary choices.

    The recipe

    Apple & Pear Seasonal Cake

    Apple & Pear Seasonal Cake

    Prep Time: 20 minutes
    Cook Time: 1 hour
    Total Time: 1 hour 20 minutes

    Ingredients

    • 300 ml Whole milk, any suitable milk will work
    • 150 g Organic grass-fed butter, any suitable spread will work
    • 1 tbsp Freshly squeezed lemon juice
    • 350 g Self raising flour
    • 100 g Golden Caster Sugar
    • 100 g Golden soft sugar
    • 1 tsp Baking powder
    • 1 tbsp Vanilla Essence
    • 200 g Pink lady apples, Any sweet apple will work
    • 200 g Sweet Pears
    • 2 tbsp Mixed Spice
    • 2 tbsp Cinnamon

    Instructions

    1. Pour the 300ml into a jug and add 1 tbsp of lemon juice to thicken for 5 minutes at room temperature.
    2. Add self raising flour, both sugars and baking powder into a bowl and mix together.
    3. Pour over the thickened milk and hand whisk until smooth.
    4. Add 1 tbsp of vanilla essence and add to the mixture.
    5. Take the butter and melt in microwave (or on hob). Add to mixture and mix until smooth.
    6. Take the apples and pears, and cut into cubes. Place them in a separate bowl and cover in 1 tbsp of cinnamon and 1 tbsp of mixed spice. Mix together until all apples and pears are coated.
    7. Add the further 1 tbsp of cinnamon and 1 tbsp of mixed spice to the mixture and whisk together.
    8. Add the coated apples and pears and fold gently through the mixture.
    9. Grease a tin with the leftovers of the melted butter and pour mixture into the tin.
    10. Cook in centre of oven for 45 mins - 1 hour on 200 degrees celcius.

  • The year that was transformative

    If I can sum up 2022 in one word, it would be transformative. I’ve been a big fan of the idea of picking a word for the year for many years now, a word that sets the intention for the year ahead. Except I didn’t do it in 2022, I didn’t bother, or if I did I certainly didn’t remember it nor did I hold it in any regard, and that was the first time in a really long time.

    It turns out that if you don’t pick a word of the year, the word will pick itself, and it’s only now, as I look back at the year can I see that it was transformative.

    When 2022 began I didn’t really know what the year would hold for me, creatively at least. After the birth of my second baby in 2021, I felt like I didn’t really know how to be a content creator anymore, and after spending fifteen years of my career doing just that, I honestly felt a little lost. I would sit and ponder how I would come back into the world of content creation, but really 2022 taught me that I just needed to be patient. I leaned into waiting and being ok with whatever was to come next. While waiting I inadvertently stumbled upon it quite naturally.

    Living more intentionally

    Slow, Simple & Intentional living has been a huge part of the way we chose to live our lives, for a long time now, but this was the year that opened up my eyes to even more ways to embrace that. The more we lean into this way of living, rejecting living by default and instead stepping outside the box and living in a way that just feels right, the more the road ahead seems to open up.

    I truly hope that 2023 will be no different, as we lean in even more to living slowly, simplifying, being more intentional with the things we do (or don’t do!), living seasonally, growing our own produce on our allotment plot, as well as naturally and doing the things that feel right for us.
